Rocky Road Brownie Cups


Ingredients:
1/2 Stick (1/4 cup) of Butter 
1/2 tsp Vanilla Extract
1/2 cup Chocolate Chips
1/3 cup Flour
1/2 cup granulated sugar
1 Egg
pinch of salt
extra chocolate chips for topping
(Makes approximately 8 cups)

Directions:

Preheat Oven to 350 degrees.

Place baking cups in muffin tin.

Microwave chocolate chips (1/2 cup) and butter until melted.


Add Vanilla and stir.


Mix flour, sugar and salt in another bowl.


Add melted chocolate mixture.


Add Egg. mix well.


Drop teaspoon fulls of mixture into baking cups (to about 1/3 full).


Bake for 15 minutes.
Add marshmallows and chocolate chips to top of each cup and place back in oven for about 5 minutes as marshmallows begin to melt.
Cool.
