Red Velvet Cake Balls

Chocolate on the outside, Soft delicious cake on the inside!!




Ingredients:
1 box Red Velvet cake mix (with ingredients specified on the box)
Cream Cheese Frosting
Chocolate Chips (regular or white)
Wax Paper
 

Directions:

Cream Cheese Frosting (If you want to make it from scratch):
Need: 4oz Cream Cheese, Softened
1 Stick Butter, Softened
1 tsp Vanilla Extract
2 Cups Powdered Sugar/ Confectioners Sugar (can be made by blending regular sugar with 1 tsp of cornstarch for every cup of sugar, until it has a powdered texture)


Mix Cream Cheese and Butter in large bowl with electrical mixer. (A Hand one Like this Cuisinart HM-70 Power Advantage 7-Speed Hand Mixer, Stainless and White can be used)


Add powdered sugar, until Creamy
Mix in Vanilla Extract 



Bake Cake as directed on the box.
After cake is baked and completely cooled, cut in pieces and place in large bowl
(I only used half the cake, makes about 15-20)


Crumble pieces in the large bowl.


Add about 5 or 6 ounces of Cream Cheese frosting


Mix the Cake and Cream Cheese Frosting thoroughly with fingers (This part gets messy).


Roll mixture into small balls and lay on cookie sheet and place in fridge or freezer (faster) for a couple hours.


Melt Chocolate...Milk Chocolate...

         


...or White




Roll balls in Chocolate and place on wax paper to firm ( I used two spoons to roll and dip in chocolate)
