Bite Sized Mini Apple Pie / Mini Apple Pie Cupcake recipe:

These are soo good, in a bite-sized portion, easy to make and worth it!! I challenge You to try it.



Ingredients:

1 Pie Dough
5 or 6 Apples
1/2 cup Sugar
1/2 cup brown Sugar
2 tsp Cinnamon
1 tsp Nutmeg
Pinch of Salt
2 tbsp Flour
2 tsp Vanilla Extract


Directions:
Wash 5 or 6 Apples (6 Apples make a little extra)...


Peel...

     

Cut into small Cubes



Mix together Sugar, Brown Sugar, Cinnamon, Nutmeg, Salt, Flour, and Vanilla Extract.


Add Chopped Apples to Cinnamon Sugar Mixture.



Sprinkle Flour onto a clean surface, place half the dough on it and use a rolling pin to roll out dough. Roll it out fairly thin...


      Use a glass or anything larger than the cupcake tin circles to cut out circles from the dough...



Place the cut out circles into the cupcake tin.



Poke holes in the bottom of each cup.


Fill each cup to the top with the apple mixture.




Using the remaining dough, cut out small stripes, about the length of the cup.


Place strips over the mini apple pies.


Place the cupcake tin in the oven and bake at 375 degrees for about 35-40 minutes.






I would advise taking them out of the tin within the first five minutes after baking, if any of the juice from the filling flowed onto the top of the tin, or elseee it will be hell to get them out if it dries and binds the tin and cupcake together.
