Mini Colorful Cupcakes

Nutella Cookies!!!

Ingredients:

1 Cup Nutella  

1 Cup Flour

1 Egg

1/2 Cup Sugar

Directions:

Preheat Oven to 350 degrees.

Place 1 cup of nutella in a Mixing Bowl .

Add egg, flour and sugar to the nutella in the Mixing Bowl .

Roll into one inch balls.

use a flat surface to press down balls.

Place in the oven for 9-10 minutes.

Cool.

Mini Cheesecake Bites

                             

Ingredients:

Oreo Cookies

1 (8oz) Package Cream Cheese

1/3 cup of Sugar

1 Egg

1/2 tsp Vanilla Extract

Directions:

Preheat Oven to 350 degrees

Place Baking Cups into Mini Cupcake Tin.

Beat Cream Cheese, Sugar, Egg and Vanilla in a Mixing Bowl.

Place Oreos in a bag and use a rolling pin to crumble.

Add a few teaspoons of butter to the crushed Oreo and place in the microwave for a few seconds, then mix to help bind the oreo.

Place 1 or 2 teaspoons of cookie crumbs in each cup. 

Beat Cream Cheese, Sugar, Egg and Vanilla in a Mixing Bowl.

Sprinkle some cookie crumbs on top of the mixture.

Place in Oven for 15 Minutes.

Allow to Cool.

Rocky Road Brownie Cups

Ingredients:

1/2 Stick (1/4 cup) of Butter 

1/2 tsp Vanilla Extract

1/2 cup Chocolate Chips

1/3 cup Flour

1/2 cup granulated sugar

1 Egg

pinch of salt

Mini Marshmallows

extra chocolate chips for topping

(Makes approximately 8 cups)

Directions:

Preheat Oven to 350 degrees.

Place baking cups in muffin tin.

Microwave chocolate chips (1/2 cup) and butter until melted.

Add Vanilla and stir.

Mix flour, sugar and salt in another bowl.

Add melted chocolate mixture.

Add Egg. mix well.

Drop teaspoon fulls of mixture into baking cups (to about 1/3 full).

Bake for 15 minutes.

Add marshmallows and chocolate chips to top of each cup and place back in oven for about 5 minutes as marshmallows begin to melt.

Cool.

Bite Sized Mini Cheesecake with Strawberry Topping

Ingredients:

24 Vanilla Wafers

1 (8oz) Package Cream Cheese

1/3 cup of Sugar

1 Egg

1/2 tsp Vanilla Extract

Strawberries

(Makes ~24)

Directions:

Preheat Oven to 350 degrees

Place Baking Cups into Mini Cupcake Tin.

Beat Cream Cheese, Sugar, Egg and Vanilla in a Mixing Bowl.

Place 1 Vanilla Wafer in each cup.

 Fill each Mini Baking Cup with the mixture, almost to the top.

Place in Oven for 15 Minutes.

After, Allow to Cool.

 Slice Strawberries.

 Place one or two sliced strawberry on each mini cheesecake.
